Decaf Coffee Beans. Decaffeination removes nearly all the caffeine from the beans. It is carried out while the beans are still ‘green’, before they are roasted. Under European law decaffeinated coffee must contain 0.1%, or less, caffeine in roasted coffee beans, and up to 0.3%, or less, in soluble/instant coffee.

Decaffeinated coffee tends to be unpopular with lovers of coffee as it has a reputation of being much less flavourful. While it is true that decaffeination can remove some of the kick that we typically enjoy in a cup of coffee, you can still have a delicious cup without the caffeine.

The most important factor in a decent cup of decaf is the same as it is with any coffee: you need to use freshly roasted and freshly ground coffee beans. What many don’t realise is that the decaf coffee they are served in restaurants and cafes will be pre-ground which may have a bigger impact on the flavour than the decaffeination process.

Roasting always comes down to heat. And with decaf, you want to be that little bit gentler with it. Keep the charge temperature – the heat of your drum just before you add the coffee – lower. Your decaf beans have less weight and their cell structure has been slightly degraded.
